Gluten Free Colomba Easter Cake

A symbol of Easter and Spring time in Italy, the Colomba, or dove in English, is a traditional cake in the shape of a flying dove, soft and moist and similar in consistency to the Christmas panettone with candied fruit inside and a crunchy sweet topping.

This gluten and lactose-free Colomba is light and airy with a delicious hazelnut sugar frosting enriched with almonds and sugar grains. 

This beautiful light and fluffy Colomba cake makes a perfect Easter gift.

Ingredients

Gluten free preparation (corn starch, sugar, emulsifier: E471, vegetable fibre (Psyllium), thickening agent: guar gum, salt, preservative: Sorbic acid), candied citrus peel 15% (orange peel, citron peel, glucose-fructose syrup, sucrose), butter (lactose-free)*, powdered sugar (sugar, corn starch), pasteurized category A fresh whole eggs, delactose-free skimmed milk powder 99,9% (lactose free)*, natural yeast, brewer's yeast, pasteurized category A fresh egg yolk, thickening agent: xanthan gum, flavourings. Frosting ingredients: powdered sugar (sugar, corn starch), hazelnuts 17%, almonds 17%, rice flour, dried egg white, plant fibres (potato, pea, plantago, flax). Garnished with sugar 4% and whole almonds 1%. MAY CONTAIN hazelnuts, pistachio nuts and soy. *Milk and skimmed milk powder present in such a quantity to guarantee in the finished product a residual lactose content lower than 0,01%. The product contains glucose and galactose as a result of the cleavage of lactose
