Turnip greens, also known as Broccoli rabes, Rapini, Spring Broccoli or Italian Turnip Tops are amongst the most commonly used vegetables in southern Italian cuisine and can be enjoyed alone as an antipasto, as a side dish or most famously in a sauce with sausage and Orecchiette pasta! The broccoli rabe belongs to the turnip family and is grown mostly in Southern Italy, in Calabria, Campania and Puglia. They are harvested when they’re not completely ripe and the flowers not yet in bloom.
Our turnip greens have been blanched and then sautéed with olive oil, garlic and chilli flakes until they are really soft and over-cooked. Cooking the turnip greens in this way takes away their initial bitterness and gives them an incredible flavour. Enjoy them as an antipasto alongside cheese and crackers.
This vegetable is a great source of polyphenols, especially flavonoids.
