The aubergine is considered the queen of vegetables in Southern Italy.  It grows in the dry, sandy soil of this sunny southern region which gives its pulp a distinct flavour. 

The aubergines are gathered fresh, peeled and cut in thin strips, seasoned with basil, mint and oregano and preserved in best quality extra virgin olive oil. These are ready to serve and ideal as an antipasto or as a side dish with meat or cheese, try them too as a tasty ingredient in recipes with meat or fish.
